Opening a small business takes more than a great product: it takes patience, experience, and a genuine connection to the community. That’s exactly what Chloe has brought to Chloe’s Colorado Cookie Co., one of the newest additions to Denver’s Santa Fe Arts District. After officially opening her storefront on July 3, Chloe has quickly become part of the neighborhood. While the shop is known for its handcrafted gourmet cookies, the story behind her business is as thoughtful as the recipes themselves.
Chloe’s journey began with a passion for baking and years of professional experience. She graduated from the Culinary Institute of America in 2016 as a classically trained pastry chef before earning a business degree from Penn State. She then spent several years working for small businesses in both Virginia and Denver, learning firsthand what makes a successful local business and taking those lessons with her as she prepared to open her own.
Like many entrepreneurs, Chloe started by baking out of a shared commissary kitchen, where every cookie is still made and packaged before being brought to the storefront. As the business continues to grow, she hopes to eventually renovate the back of the space into a production kitchen so customers can watch the baking happen right in the shop.
Quality has always been at the center of Chloe’s business. After spending six years as a wedding cake decorator, she knew that if she was going to create her own product, it needed to meet the highest standards. She spent countless hours developing a cookie recipe that stays soft, fresh, and flavorful long after it’s baked, making it just as enjoyable whether it’s picked up in the shop or shipped across the country.
The menu is always evolving, with seasonal flavors making regular appearances throughout the year alongside customer favorites. Chloe also enjoys finding ways to give back through discounts for different groups, partnerships with nonprofits, and participation in local community events. She also takes into consideration sustainability, with compostable packaging and environmentally friendly practices incorporated into the business wherever possible.
Choosing the Santa Fe Arts District wasn’t an accident. Chloe lives nearby and has watched the neighborhood continue to evolve into a destination full of independent businesses. She was inspired by the sense of community she found here and believes that when local businesses support one another, the entire neighborhood benefits.
That philosophy is something she hopes to continue inside her own storefront. As the shop grows, Chloe plans to welcome local artists and makers into the space, creating another opportunity to showcase the talented small businesses that help give the neighborhood its character.
For Chloe, owning a small business has also been incredibly rewarding as it gives her the opportunity to make decisions that directly benefit her customers and community. Whether it’s introducing a new seasonal cookie, offering a special promotion, or simply brightening someone’s day with a great dessert, her goal has always been to create something that brings people together.
